Big Pot Meal This Week…Easy Chicken and Dumplings

Mmm…omnomnom!! Chicken and dumplings…one of our uber favourite comfort foods. Which is why I don’t make it too often…especially because it’s so high in sodium. The recipe calls for Cream of Chicken soup, but I opted to use Campbell’s Light Cream of Mushroom soup instead, and it’s still pretty high in sodium. So, you could only imagine how bad it is with the Cream of Chicken, the recipe calls for. The Pillsbury Country Biscuits, called for in the recipe, doesn’t help the sodium tally either. Whenever I’ve made it on the stove, I’ve been able to make a broth and biscuits from scratch, which have helped in keeping the sodium lower. As of yet though, I haven’t found a crockpot recipe that doesn’t use canned soup or tube biscuits. If any of you have one, I’d love to hear from you though!!

Dinner Date At Kelsey’s

So, thanks to a coupon card from Kelsey’s, we decided to have dinner there on Sunday. Gotta love coupons right?! 😀

I finally decided on The Ultimate Steak Sandwich, with a side of fries and a pickle spear. It was made up of marinated grilled steak, Rickard’s Red caramelized onions, garlic sautéed mushrooms, smoked cheddar cheese, roasted garlic mayo and honey mustard. It was definitely tasty, but as always, too salty for my personal taste. Then again, most restaurant foods are super salty for me.

My hubby decided on The Messy Fish Sandwich, with a side of fries and a pickle spear. It was made up of beer-battered piece of wild north Atlantic haddock split in two, Kelsey’s creamy coleslaw, sliced tomatoes shredded lettuce and zesty tartar sauce. When they call it a messy sandwich, it does NOT disappoint!! After my hubby took his first bite, it fell apart onto the plate LOL I had a bite of what was left in the bun, and it was really tasty. The fish was lightly breaded, just how I like it. I think if we went back to Kelsey’s, I’d probably get this sandwich, because even though it was salty – it didn’t taste as salty as my choice of sandwich did.

All in all, we had a nice evening out, which was made even better by not putting too much of a dent in our wallets!! If Kelsey’s wants to send us another coupon, we’ll be happy to dine there again 😉

Off The Hook Gourmet Fish’n’Chips

Thanks to another deal voucher, my hubby and I checked this place out. They’re located just south of Danforth on Broadview, in a small location, with a few eat-in seats.

After perusing the menu, we decided to start with the gluten free fried calamari with cucumber cilantro dipping sauce. It was ok…fried calamari is still a hit and miss food for me. I have yet to have some that blows me away, but I keep trying nonetheless. Maybe I just like grilled calamari better? Who knows!! The breading was light…but slightly on the tasteless side? Maybe that’s what I didn’t like about it? But that’s just me!! You could love it right? 🙂

We then ordered the halibut with fries, creamy coleslaw and chipotle mayo dipping sauce. HOLY halibut!! The piece was big…for me at least, and it came with a good amount of fries. Since I had eaten fried calamari before hand, I did take the top half of the batter off the halibut. The fish was perfectly cooked in it’s batter shell, that was crisp and light. It was the kind that wasn’t overly thick, so that the fish itself gets lost in it – ya know? The coleslaw was lightly creamy…just the way I like it!! The fries were hand cut and that’s the best kind 🙂 And the chipotle mayo dipping sauce was SPICY!! But we enjoyed it 🙂 They do have a list of other dipping sauces, including traditional tartar sauce, so no need to fear!! Though it is a bit pricy, at $13…well…let me rephrase that…it’s a bit pricy for us LOL Over all it tasted good, and if I went there again, I’d order the halibut again or give the mahi mahi  a try. Crockpot Chicken With Black Beans in Cream Sauce

Remember, how in my last dinner post, I told you we had bought mutant chicken breasts from T&T? Well, I took the last 2 pieces we had, and made this recipe. At first, I wasn’t sure about making it, as it’s pretty high in sodium, but I went for it anyway. When I read that I would need ‘Neufchatel cheese’, I was like what IS that?! But, I quickly found out it’s very similar to cream cheese. Otherwise I wouldn’t have bothered making this recipe, if I had to go out of my way to find this cheese LOL I personally have never seen this cheese, in the grocery stores I shop at, but I wasn’t looking for it either? The added cream cheese (which looking back now I should’ve only added 3/4 of the brick), makes it turn the not so pretty colour above, but don’t let that fool you. Next time I’ll add more colourful veggies, to bump up the pretty factor 🙂

So, after making it on Friday, we finally had it tonight over some basmati rice. First off, I tasted it while it was cold, and it tasted like chicken salad with a kick. I could definitely eat this cold!! But, tonight we did heat it up, and it was NUMMY. Now the salsa makes it slightly (in our taste) spicy, so if you’re sensitive to it, just use a mild or green salsa instead. If you’re in the mood for a quick to prepare crockpot meal, I’d definitely say to give this one a try!!

What Was For Dinner Tonight!!

We had bought these mutant chicken breasts from T&T awhile back, and this week I decided to make Cheddar BBQ Chicken in the oven. It’s a really simple recipe to prepare and bake. To accompany it, I made smashed potatoes with Boursin Herb and Garlic cheese in it. If you haven’t tried it yet, you MUST. It’s too nummy not too!! You can also serve it with whatever veggie you feel like as well. I love roasted broccoli, because it’s easy and tastes fantastic!! Now, I know the chicken doesn’t really look like there’s any cheese on it, but trust me I did add the shredded cheese LOL It’s most likely because I only used 3tbsp of BBQ sauce per breast (which my hubby and I halved to share…they’re THAT big). But trust me, it tasted great!!

Salsa + Sour Cream + Corn = Nummy Salad Lunch!!

Today I was standing in the kitchen, wondering what to eat. I opened the pantry to find canned corn – great!! Now, what to do with it? I thought for a bit, and I decided on adding some salsa (1/4 cup to be exact) and some Greek yogurt sour cream for the extra creaminess compared to regular (1/4 cup as well). I finished it off with cracked black pepper, and my salsa corn salad was born. It may not look like anything special, but it was flavourful, and that’s what matters to me!!
