Veggie and Feta Bulgur Salad

Decided to make a bulgur salad, as that’s the grain we have in the house. I was looking for something different, then the usual Tabbouleh it’s used in. I looked around the interwebs, and in the end saw one that caught my eye. I just took the idea, of the recipe, and made it my own though. I started with cooked course bulgur, added grape tomatoes, carrots, feta cheese, olive oil, balsamic vinegar, black pepper and garlic pepper. I mixed it all together and voila 🙂 It turned out really yummy, so I’ll definitely make it again!!

Fruit Salad

A while back I had a bunch of fruit, that was very ripe, so I decided to turn them into a fruit salad. I searched around for a recipe, and came across the one below. The fruits I used were different, since at the time I had, apples, peaches, pears and plums. But how the recipe is made, is what I took from it (as well as adding a touch of honey), and it turned out really good!! Will definitely make it again, especially since, any fruit combination works.

Cranberry Kale Salad

Was watching the news one night, and they had a segment, about how to get children to eat more greens. The lady they were talking to, said she makes a simple kale salad, with lemon and parmesan cheese…and gets the kids to make it. I’ve bought a few kale salads from various places, and thought I’d finally make it myself, since it would be way cheaper and looked easy enough. So in my version I used olive oil, red wine vinegar, grated parmesan and dried cranberries. Thought it turned out pretty good, and will definitely make it again. What varieties of kale salads have you made? Would love to hear about them!!

Salsa + Sour Cream + Corn = Nummy Salad Lunch!!

Today I was standing in the kitchen, wondering what to eat. I opened the pantry to find canned corn – great!! Now, what to do with it? I thought for a bit, and I decided on adding some salsa (1/4 cup to be exact) and some Greek yogurt sour cream for the extra creaminess compared to regular (1/4 cup as well). I finished it off with cracked black pepper, and my salsa corn salad was born. It may not look like anything special, but it was flavourful, and that’s what matters to me!!

Warm Chickpea and Grain Mustard Salad

Mmm…my hubby made this earlier this week for us. We first saw and ate this at the 2011 Toronto Buskerfest, at the Kozlik’s Canadian Mustard stand. Now their mustard is super tasty, but a bit on the pricey side for us. If you have the money to spend though, I’d definitely recommend you give them a try 🙂

We basically looked at the dish, as we ate it, and figured out that it was just chickpeas, diced onions, diced green peppers, garlic and grain mustard sauteed in a pan. Begin with sauteeing the onion, garlic and green peppers until they’ve softened a bit. Then add the chickpeas and grain mustard and let them heat through. It’s really THAT simple!! And this dish has been a part of our recipe rotation ever since 🙂

Weird Concoctions?

Have any of you, come up with a weird food concoction, off the top of your head? Yesterday I didn’t know what to eat for lunch. I did know I didn’t want to have a sandwich though. So, I opened up my pantry, and after staring at it for a while, came up with a corn and chicken salad. I took a can of no salt added corn niblets, then added 2 slices of deli roasted chicken meat. I also added a chopped pickle, a tablespoon of miracle whip and Frank’s hot sauce. Now, I know it probably looks and sounds gross, but it wasn’t half bad LOL I’ll definitely make it again 😀 Though next time, I’ll added more spices, to jazz it up some!!
