Was perusing Pinterest before Easter, and of course it was full of Easter treats recipes. One that stood out to me though, were these coconut macaroon nests. For the one and only reason…simplicity!! With only a few ingredients, it was pretty easy for me to decide to try this recipe out. It was the perfect choice to make while our son was having Daddy time playing. I was able to whip them up quickly and the nests were done before his bed time. Instead of melting white chocolate (we’re not much fans of it any way), I hacked it with cookie icing, to stick the eggs to the nests. Not as pretty, but I think I actually, almost nailed it visually LOL For me the recipe made 24, since it seems I put a bit more of the mixture in each mini cupcake holder 😉 They were yummy, though on the much sweeter side. I may cut the sugar in half the next time I try, since the coconut flakes are already sweetened. All in all, it’s a super cute treat for Easter or for spring in general.
