Coconut Macaroon Nests

Was perusing Pinterest before Easter, and of course it was full of Easter treats recipes. One that stood out to me though, were these coconut macaroon nests. For the one and only reason…simplicity!! With only a few ingredients, it was pretty easy for me to decide to try this recipe out. It was the perfect choice to make while our son was having Daddy time playing. I was able to whip them up quickly and the nests were done before his bed time. Instead of melting white chocolate (we’re not much fans of it any way), I hacked it with cookie icing, to stick the eggs to the nests. Not as pretty, but I think I actually, almost nailed it visually LOL For me the recipe made 24, since it seems I put a bit more of the mixture in each mini cupcake holder 😉 They were yummy, though on the much sweeter side. I may cut the sugar in half the next time I try, since the coconut flakes are already sweetened. All in all, it’s a super cute treat for Easter or for spring in general. Because who really needs a holiday as an excuse to eat – right?! The link for the recipe is below. Give it a try and let me know what you think of it!!

Merry Christmas and Happy New Year from Our Family to Yours!!

The holidays are always a crazy time, trying to find the perfect gifts, decorating and baking. This year was a blur for us as we had some flooding issues, and didn’t get back into our condo until a few days before Christmas. But, at least we were home for the holidays and that’s all that matters!! Speaking of which, I decided to make a roast for Christmas Day in our Crock Pot. It was great, as it cooked while we opened presents and spent the day watching Christmas shows with our son. I had to cook it on HIGH for 4 hours, since we got a late start on it, but it turned out great!! The photo above is showing you the remnants of leftovers, as I forgot to take a photo before we ate LOL Recipe was super simple…placed the 3lb roast in the middle and placed the carrots, celery, onions and potatoes around it. If you have your own spice blend, then add it with beef broth to the pot. I added a package of Club House’s wet pot roast spice blend, then set the Crock Pot and let it do it’s thing. Will definitely make pot roast this way again!!

Krispy Kreme Valentine’s Day Doughnuts Are Here!!

Spiked Oreo Strawberry Santas

Wow…I can’t believe it’s been over a month since I last posted!! I hadn’t realized it had been that long LOL Time sure does fly doesn’t it?! Hope all my U.S. readers had a wonderful Thanksgiving, a couple of weeks back, and that you got to enjoy good food and good company 🙂 But now the holidays are in full swing, so to apologize for the lapse in posting, here’s some adorable Oreo Strawberry Santas!! Of course, they can be made without booze, for the little ones 🙂 But apparently, these are AMAZING with, and easy to whip up to boot. So, give them a try for an upcoming, Christmas party or potluck.

Fruit Owl!!

As you all know by now, I love owls…especially cute ones. And this fruit owl, made up of grapefruit, orange, mandarin, banana and blueberries, is no exception…and edible to boot. Will have to remember this, for when we have little ones!!
