Free Small Ice Cream Cone from Dairy Queen – March 16, 2015

Yesterday all Dairy Queens, were giving out free small ice cream cones, as part of their 75th anniversary celebrations. So, my hubby and I grabbed one each for dessert, and paid the extra bit for chocolate dipping it…omnomnom!! Anyone else take advantage of the free cone yesterday??

No-Bake Peanut Butter Bars

I was in the mood for PB and chocolate the other day, so I fired up the interweebs to look for a recipe. That’s where, I came across this lovely no-bake one, and knew I just had to try it. The notes in the recipe states ‘Reese’s Who?’. Indeed!! 😉 It definitely reminds me of a Reese’s PB cup, and even better, it tastes less sweet then one. I always find, that by the end of eating, one of those cups, the sweetness gets to me. These devilishly scrumptious squares, don’t affect me the same way, which I very much enjoy 🙂 If you’re like me, then I believe you’ll enjoy this recipe as well!! Instead of a 13×9 pan, I made these in a 9×9 pan instead, as I thought they’d be too thin spread onto a longer pan. I cut the chilled square into 36 smaller squares, which are the perfect serving size for us. If you end up trying this recipe for yourself, and do make it in a 13×9 pan, I’d love to hear how it turned out!! Jalapeno Popper Roll Ups and Creamy Apple Dessert

As part of our Super Bowl Sunday spread, I decided to make something new, to see how it tastes. I perused the interweebs, and found this recipe, that caught my eye. My hubby and I are fans of Jalapeno Poppers, so we thought we’d give this one a go. It’s a definitely a twist on the original, but was easy to make, and not bad. The recipe says it makes 16 servings, but I have at least another batch worth, of the filling left. So for us, it actually makes twice as much, which we’ll make at another time. Definitely great for a crowd though, since it makes so much!!

I was also looking to make a new dessert, so when I came across this Creamy Apple Dessert recipe, I wanted to give it a try!! It was definitely a hit with us, and even my parents. It tastes like an apple cheesecake, so if you’re into that combo, you’ll like it too. This recipe would be even better with cherry pie filling, which is what I’ll be trying next time for sure!! I may actually take the time, to make the filling from scratch, to lessen the sugar content. Will be sure to make this one again soon.

Happy Super Bowl Sunday 2015!!

Pretty Fern Latte Art

Hubby and I were at a Starbucks recently, and when we got our latte’s, the barista actually made some latte art for us!! Pretty little ferns…love it 🙂 Don’t see this often, when we get lattes, so always excited when we do!!

Veggie and Feta Bulgur Salad

Decided to make a bulgur salad, as that’s the grain we have in the house. I was looking for something different, then the usual Tabbouleh it’s used in. I looked around the interwebs, and in the end saw one that caught my eye. I just took the idea, of the recipe, and made it my own though. I started with cooked course bulgur, added grape tomatoes, carrots, feta cheese, olive oil, balsamic vinegar, black pepper and garlic pepper. I mixed it all together and voila 🙂 It turned out really yummy, so I’ll definitely make it again!!

Slow Cooker Mediterranean Stew

I found this recipe last week, on AllRecipes.com, while searching for a vegetarian slow cooker dish. I think it’s more, Mediterranean inspired, because of the spice combination. It turned out pretty good and VERY spicy (which we like), but that’s due to the amount of red pepper flakes I put in it. If you follow the recipe to a ‘T’, I don’t believe it’ll be too spicy. We’re not huge okra fans, so I used red kidney beans instead. It definitely thickened up the stew, more so, then the original recipe probably gets. But we don’t mind it 🙂 Next time I think I’ll add chickpeas instead though, and possibly a bit more liquid. Oh!! I would definitely suggest, you either cut up the eggplant larger then suggested, or check on the stew to maybe lessen the cooking time? Because by the time we had gotten to it, after 10 hours on low, the eggplant had completely disintegrated into the stew!! To me…the photo of the stew I took, makes it look more like, the Jamaican Red Bean Stew I make (minus the coconut milk) LOL If you’re interested in making this recipe, I’ve included the recipe link below…
