Slow Cooker Mediterranean Stew

I found this recipe last week, on AllRecipes.com, while searching for a vegetarian slow cooker dish. I think it’s more, Mediterranean inspired, because of the spice combination. It turned out pretty good and VERY spicy (which we like), but that’s due to the amount of red pepper flakes I put in it. If you follow the recipe to a ‘T’, I don’t believe it’ll be too spicy. We’re not huge okra fans, so I used red kidney beans instead. It definitely thickened up the stew, more so, then the original recipe probably gets. But we don’t mind it 🙂 Next time I think I’ll add chickpeas instead though, and possibly a bit more liquid. Oh!! I would definitely suggest, you either cut up the eggplant larger then suggested, or check on the stew to maybe lessen the cooking time? Because by the time we had gotten to it, after 10 hours on low, the eggplant had completely disintegrated into the stew!! To me…the photo of the stew I took, makes it look more like, the Jamaican Red Bean Stew I make (minus the coconut milk) LOL If you’re interested in making this recipe, I’ve included the recipe link below…

Egg Nog Cookies

We made these for Christmas a few year’s back, and loved them then, but hadn’t made them since. I’ve been trying out new recipes since then, but decided to make these again today. They’re super easy, and taste just like egg nog!! The holidays are nothing without egg nog right?! So why not in a cookie!! If you like egg nog, then definitely give this cookie a try, I’m sure you’ll like it as much as we do 🙂 I can’t find the exact recipe I have, but this one is the closest I found online…

Peppermint Coconut Cocoa Balls

We made these last Christmas, and we loved them!! Last year, we made them right around Christmas, but this year, we didn’t get to making them until this past Monday. The original recipe calls for rum, but we’re not a fan, so I tried peppermint and they’re so yummy!! This recipe is on our list of holiday recipes, and if you give it a try, it may just get onto yours too 🙂

Kraft Chocolate Peanut Butter

So, I’ve always loved Nutella…I mean…chocolate and hazelnut…enough said right? WRONG. Chocolate and peanut butter…of course!! Funny thing is I LOVE the choco-peanut combo, so I’m not sure why it took me so long, to actually get around to trying this PB. I’ll tell you…I won’t be going back to Nutella ever again, because Kraft’s Chocolate PB hits every craving spot. If you haven’t tried it yet, I would definitely recommend you do, you may not go back to Nutella either LOL

Spiked Oreo Strawberry Santas

Wow…I can’t believe it’s been over a month since I last posted!! I hadn’t realized it had been that long LOL Time sure does fly doesn’t it?! Hope all my U.S. readers had a wonderful Thanksgiving, a couple of weeks back, and that you got to enjoy good food and good company 🙂 But now the holidays are in full swing, so to apologize for the lapse in posting, here’s some adorable Oreo Strawberry Santas!! Of course, they can be made without booze, for the little ones 🙂 But apparently, these are AMAZING with, and easy to whip up to boot. So, give them a try for an upcoming, Christmas party or potluck.

Menemen – Turkish Egg Scramble

When in Turkey, or raised in a Turkish household, this is a staple breakfast food. It was one of my favourites growing up, and I finally decided to make it myself 🙂 The combination of lightly scrambled eggs in a yummy tomato, pepper, onion and garlic sauce is pure Heaven. Dunking toast into it, is the best part too…omnomnom. I made mine the way my Mom makes it, but the recipe below, is a great guide – if you want to give it a try!!

Crock Pot Black Beans and Rice Soup

I made this soup, a couple week’s back, before Thanksgiving. I basically followed this recipe, but I passed on the Tabasco sauce, and added cayenne pepper instead…it was SPICY!! Just how we like it 😀 It was really good, and it’s a great go-to, one pot soup to make.

Fruit Salad

A while back I had a bunch of fruit, that was very ripe, so I decided to turn them into a fruit salad. I searched around for a recipe, and came across the one below. The fruits I used were different, since at the time I had, apples, peaches, pears and plums. But how the recipe is made, is what I took from it (as well as adding a touch of honey), and it turned out really good!! Will definitely make it again, especially since, any fruit combination works.

Was perusing lower sodium recipes, and came across these, on a list from Health.com. They turned out all right, and are pretty tasty. Not the HUGEST fan of banana in my cookies, but the dark chocolate chips I used, more then make up for it!!
