What Was For Dinner…

 

Ever since my hubby and I got our new griddle/panini  press, we’ve been thinking of ways to use it. We’ve mostly used it for making breakky on the weekends, but tonight, we made chicken quesadillas!! Nothing complicated, just some good old, sauteed chicken, lots of nummy Tex-Mex shredded cheese and salsa. Placed the folded tortilla on the panini press, and let it heat through for 10mins or so. Paired it with a side salad, and voila, an easy peasy dinner for two…omnomnom!!

Happy St. Patrick’s Day Everyone!!

So, the brining is done, and now it’s on to the slow cooking goodness of the crockpot!! I layered the crockpot with small potatoes, carrots, onions, mushrooms and garlic. Then placed the brisket on top with sliced cabbage around it. Added a tablespoon more of the pickling spices, 1 can of Kilkenny ale and water until almost covering the brisket. I then set it on LOW for 8hrs.

Once it was done, it wasn’t much to look at, but the brisket turned out really yummy!! The veggies were good too, but next time I’ll cook them less. I’ll definitely make this again, for the pure simplicity of it, and the omnomnom goodness!!

Brining for St. Patty’s Day

St. Patrick’s Day is this coming Sunday, and my hubby and I are attempting to brine a brisket, to make corned beef and cabbage. This will be our first time, so we’re hoping for the best LOL Now to let the brine cool off over night, before we soak the brisket in it, until Sunday. We used the recipe below for the brine…easy peasy lemon squeezy!!

Krispy Kreme Oreo Donuts


Last Saturday, we were driving by Krispy Kreme, and the light was on!!  Just. couldn’t. resist. So, we got in line, as the light is like a beacon calling people to come in LOL We decided to give the Oreo donuts a try, along with a lemon filled one, as I had never had one of those…if you can believe it. Now, we didn’t eat all 3 at once…that would be…excessive LOL We had each one on a different day. We first had the cream filled Oreo crumble donut, with a light chocolate filling. Not too bad. We next tried the lemon filled, and I have to say, I didn’t like it so much. I think I prefer the plain hole donuts better. Then we finally had the chocolate cake donut with Oreo crumble and cream on top. I preferred that one over the cream filled one, but again, it wasn’t anything special. Ah well…at least I can say I’ve tried it!!

Spicy Slow Cooked Chili

This is what I decided to make this week, for our big pot meal!! Since we’re in the middle of winter, we always love making chili to warm up with 🙂 I found this recipe on AllRecipes.com, which looked to be a basic recipe, that you can add to with whatever you like. I personally have never used tomato sauce when makin chili, but there’s a first time for everythin right?! So, I used Hunt’s Thick & Rich Spicy Red Pepper & Chilies Tomato Sauce, and it worked really well 🙂

Spicy Slow Cooked Chili

The recipe looks like it makes a thick chili. But, my hubby and I love a chili with a bit more liquid in it, so I added 2 cups of beef broth. I also added cumin, more cayenne pepper and chili powder then it calls for, 1 jalapeno (seeded) and we had leftover bacon so we added that too. After cooking on High for 4hrs, I served it over tortilla chips, and garnished with shredded cheese and sour cream…omnomnom!! If you’re a lover of chili, I’d recommend this recipe. If you liked it as much as we did, I’m sure you’ll add it to your repotoire too.

Gerry Flintstone Dip

When I first heard of this, from a friend, I was like…’what?!’ LOL But I was told that it was amazing. So I looked it up and found the recipe, through the Today’s Parent Forum to try out, for Super Bowl sunday a few weekends back. It was pretty simple to make, and even though we made it without the bread bowl the original recipe calls for, it still turned out very yummy!! Mind you, what ISN’T yummy, when bacon and cheese is involved right?! 😉 I’d definitely recommend you try this out for yourselves, as I don’t think you’ll be disappointed!!

Valentine’s Treats…Courtesy of Krispy Kreme!!

My hubby surprised me, and brought these scrumptious goodies home for us yesterday…omnomnom!! The Chocolate Iced Heart is basically their Chocolate Iced Kreme Filled donut, but in the shape of a cute heart 🙂  The Double Chocolate is basically their Chocolate Iced Glazed with a swirl of chocolate cream in the centre…pure nummy evilness!! These donuts are available at Krispy Kreme until tomorrow (Valentine’s Day – February 14), so get them while they last 🙂

Rold Gold Peppermint Dipped Snowflakes

Salty, sweet, pepperminty goodness all wrapped up in a cute snowflake shaped pretzel!! I noticed these around the holidays, and having loved the chocolate dipped pretzels they have, grabbed a bag to give them a try. They were omnomnom-licious…I’ll definitely be buying these every year!!
