What’s for Dinner Tonight!!

Made a super simple Pasta Bake tonight. Started off by sauteeing 2 onions, minced garlic, 2 zucchinis, mushrooms (1 package), roasted red peppers (1 small jar – about 4 peppers), dried red pepper flakes and ground black pepper. At this point I added one of our favourite jars of pasta sauce. During this time, I had the spiral pasta boiling. Once cooked, I mixed the sauce and pasta together. Then I placed half the mixture in a 9×13 dish, and sprinkled 1 cup of shredded mozzarella cheese, before putting the rest of the mixture on top and sprinkling another cup of cheese. Once that’s done, you stick it into a 375 degree oven for 20-25mins or until heated through.

Got one, while at the Tanger Outlet Mall in Cookstown, at a shop called Imperial Meats Cafe & Pastry Boutique 🙂 As you can see, it was HUGE, so my hubby and I shared it LOL Was it ever nummy too…omnomnom!! The filling wasn’t too sweet, and had just the right amount of tang to it. The shell was thick, but crispy, and went really well with the filling. A true sign of a good cannoli…at least in my opinion!!
