Made a super simple Pasta Bake tonight. Started off by sauteeing 2 onions, minced garlic, 2 zucchinis, mushrooms (1 package), roasted red peppers (1 small jar – about 4 peppers), dried red pepper flakes and ground black pepper. At this point I added one of our favourite jars of pasta sauce. During this time, I had the spiral pasta boiling. Once cooked, I mixed the sauce and pasta together. Then I placed half the mixture in a 9×13 dish, and sprinkled 1 cup of shredded mozzarella cheese, before putting the rest of the mixture on top and sprinkling another cup of cheese. Once that’s done, you stick it into a 375 degree oven for 20-25mins or until heated through.

Pasta bakes are awesome! Because they freeze quite well, I like to make a huge batch and shove some in the freezer for those times I can’t be bothered cooking.
Freezing is great!! Wish I had more room, in my freezer, for quick meals LOL
