This was the first cake I made after having our son, where I actually felt like baking. It was from a box, and as I was emptying the box, I noticed 2 recipes. I took a look and one was called Mexican Chocolate Cake. All I needed to add was 1tsp of cinnamon to the mix. It turned out pretty good with the addition, but then again, we love cinnamon. Will definitely add it again next time. If you love cinnamon too, give it a try and see if you enjoy the taste…

Purdy’s Fall Chocolates…Mmm…Pumpkin!!

Last week, while passing by our local Purdy’s store, I saw that they had their fall chocolates out ๐Ÿ˜€ Who am I to pass up Pumpkin anything, so we grabbed a Pumpkin Truffle, Pumpkin Caramel and a Lemon Cream just to change things up a little ๐Ÿ˜‰ They were all yummy too!! The Pumpkin ones had a great pumpkin spice taste to them and the Lemon had tiny pieces of rind that made it tangy…omnomnom!! Get your own chocolates while they’re in season…especially if you’re a Pumpkin Spice flavour lover like myself!!

No-Bake Peanut Butter Bars

I was in the mood for PB and chocolate the other day, so I fired up the interweebs to look for a recipe. That’s where, I came across this lovely no-bake one, and knew I just had to try it. The notes in the recipe states ‘Reese’s Who?’. Indeed!! ๐Ÿ˜‰ It definitely reminds me of a Reese’s PB cup, and even better, it tastes less sweet then one. I always find, that by the end of eating, one of those cups, the sweetness gets to me. These devilishly scrumptious squares, don’t affect me the same way, which I very much enjoy ๐Ÿ™‚ If you’re like me, then I believe you’ll enjoy this recipe as well!! Instead of a 13×9 pan, I made these in a 9×9 pan instead, as I thought they’d be too thin spread onto a longer pan. I cut the chilled square into 36 smaller squares,ย which are the perfect serving size for us.ย If you end up trying this recipe for yourself, and do make it in a 13×9 pan, I’d love to hear how it turned out!! Slow Cooker Mediterranean Stew

I found this recipe last week, on AllRecipes.com, while searching for a vegetarian slow cooker dish. I think it’s more, Mediterranean inspired, because of the spice combination. It turned out pretty good and VERY spicy (which we like), but that’s due to the amount of red pepper flakes I put inย it. If you follow the recipe to a ‘T’, I don’t believe it’ll be too spicy. We’re not huge okra fans, so I used red kidney beans instead. It definitely thickened up the stew, more so, then the original recipe probably gets. But we don’t mind it ๐Ÿ™‚ Next time I think I’ll add chickpeas instead though, and possibly a bit more liquid. Oh!! I would definitely suggest, you either cut up the eggplant larger then suggested, or check on the stew to maybe lessen the cooking time? Because by the time we had gotten to it, after 10 hours on low, the eggplant had completely disintegrated into the stew!! To me…the photo of the stew I took, makes it look more like, the Jamaican Red Bean Stew I make (minus the coconut milk) LOL If you’re interested in making this recipe, I’ve included the recipe link below…

Easy Pierogi Casserole

I came across this recipe, on Facebook, when a friend had posted it. I thought we’d give it a try, because it sounded really good, and simple enough to make. I will say it was comforting, but I guess for us, it was lacking some flavour to it. It honestly tasted more like, the Potato Skins appieย you’ve had at a restaurant/bar,ย so if you love those…I would think you’ll like this too. Not sure I’ll make it every again, but if you’re a potato fan, you may enjoy this recipe.
