Crock Pot Honey Garlic Chicken


Found this recipe on Pinterest, and decided to give it a try, for this week’s Crock Pot dinner. I love the combo of honey and garlic together. I made the recipe almost exactly, though I added onion and put less lemon juice in it. I served it over some Jasmine rice. It turned out okay, though it seemed a bit bland, which made me sad. The garlic flavour was perfect, then again, we always put more then is called for in a recipe LOL But we barely taste the honey flavour 😦 We even added Sriracha to it, after tasting it, to give it a bit of oompf. I had high hopes for this recipe. I will definitely try another recipe sometime though, but we’ll be passing on adding this one into the rotation. The search continues!!

Another Superbowl in the Books!!

Hope you all enjoyed the game with great people, and of course…food!! This year I tried two new recipes for our game day meal. 

First one being the Super Duper Garlic Dip. It’s a simple recipe consisting of 3 ingredients. Cream cheese, mayo and garlic (I had minced, so used that). I also added some toasted garlic and onion dip mix to added flavour without salt. I placed it all in my Little Dipper mini Crock Pot, and let it warm up for about an hour, stirring occasionally. Served it with veggies and chips and we really enjoyed it!!

Next I tried out this Seven Layer Dip Cups Recipe. Usually I make a nacho casserole, but thought I’d change it up. Another easy recipe, that didn’t take long to make, with a 15mins bake time between steps. 

The first step called for placing refried beans and shredded cheese on top of a tortilla square. I also put a little bit of queso sauce in this layer, and though it made the bottom a little soggy, we enjoyed it. 

Then I placed another tortilla square on top and placed it in the oven. At this time I got the condiments ready. I didn’t feel like making guacamole, so used chopped avocado instead. 15mins later I took the tray out of the oven and let it rest for a minute. After which I placed salsa, avocado, sour cream, tomato and green onion, like you see in the first photo. They turned out great and were a nice change from what I usually make 🙂

I would highly recommend both recipes for your next gathering or just to test out yourselves!! Will definitely make them again soon.

Crock Pot Garlic Brown Sugar Chicken

Saw this recipe, after getting my weekly email from Food.com. It was about Crock Pot recipes, one could make, during the hot months of summer. After perusing the list, this one caught my eye, because a) I was looking for a new chicken recipe to try out b) was made in the Crock Pot…win!! and c) had very few ingredients I already had on hand. I was able to put it all together and into the Crock Pot within 5mins…was loving it already!! I chose to use boneless, skinless chicken thighs, since that’s what I had in the freezer. I did defrost them a bit, for almost a day in the fridge first, but you could definitely cook it from frozen. Being that there wasn’t any bone, I cut the cooking time to 4hrs on Low, which was perfect. For our personal tastes I used 1/2 cup of sugar, a 1/3 cup of apple cider vinegar, 1/2 cup of Sprite Zero, 4tbsp of minced garlic, 1/2 tsp of ground black pepper and 1/2 tsp of cayenne pepper. At first I thought, the vinegar was REALLY strong, after mixing it all together. But after cooking, it mellowed out enough, for us to enjoy it. The chicken was moist, flavourful and reminded my hubby and I of sesame chicken…minus the sesames LOL I served it over rice, so it could soak up the sauce. I know, from the photo, it doesn’t *look* very appetizing…but we very much enjoyed it. If you’re looking for a new chicken recipe, that doesn’t require much work, then I’d definitely suggest you give this one a try!!
